At JOHN’s Chef’s Hall, we want to offer our guests more than just good food. We want to create an experience and give the opportunity to recognize the true value of the products we use by highlighting the best Latvian products. Based on the mindset, experience and professionalism of Chef Kristaps Silis and his team, we want to highlight each of these carefully researched products in the tasting menu and transform them into a unique and distinctive flavor.

I grew up in the countryside, where I spent the first part of my life without a clear plan for the future. Becoming a chef was never something I specifically aspired to – I was open to possibilities and this path found me. After leaving school, I moved to the capital, where my culinary journey really began. At just 21 years old, I was offered the position of head chef. I accepted the challenge, and thus began my long journey of growth and self-development.

Pretty much everything I know today I learned through experience – through experimenting, trying, failing and refining. This hands-on approach has given me a deep understanding of what happens in the kitchen, from the preparation of ingredients to the creative process behind each dish. To broaden my skills and vision, I interned at several Michelin-starred restaurants abroad, gaining new perspectives and inspiration.
Step by step, I worked towards my ultimate goal. Last year, I opened JOHN Chef’s Hall, a restaurant based on my vision, taste and experience. Here I have the freedom to create and share what I truly believe in – and offer my guests a dining experience that reflects who I am.

The JOHN Chef’s Hall story is not about the food, it’s about the culinary experience. Our menu includes author’s recipes, unique creations that tell a story on every plate. Chef Kristaps Sīlis’ culinary approach combines traditional techniques with modern innovation, creating dishes that are both familiar and surprising. Each recipe is carefully developed to highlight the natural flavors of the ingredients, often using elements gathered from nature or harvested from the gardens of our local partners and farmers. JOHN Chef’s Hall is more than just a restaurant; it is a tribute to the land, the seasons and the people who make our food possible. We invite you to join us on this culinary journey and experience the true flavors of our region.

Frequently asked questions

  • The minimum height of our guests must be at least 1.40 m
  • Weight max. 150 kg
  • Guests under the age of 18 must be accompanied by an adult
  • Wheelchair users and people with minor disabilities can of course also take part in this event
  • Alcohol is not served to minors
  • Clothing suitable for the weather
  • Please bear in mind that the wind can be a little stronger at an altitude of 50 m and the temperatures a little lower
  • in groups of up to 22 people
  • Persons who are drunk and/or obviously impaired by drugs, as well as children and young people unaccompanied by an adult, are not permitted to participate
  • No alcohol is served to children and young people
  • please arrive at least 15 minutes before the “flight” to the venue
  • Expiry of the ticket if the departure date is missed
  • Menu option (standard or vegetarian) must be selected at the time of booking
  • please indicate any intolerances/allergies when booking
  • Flying is not possible in winds above 14 m/s or in the event of lightning strikes.
  • Rain is not a problem as the table is covered.
  • If the flight has to be canceled, the organizer will let you know. The meal will then be served in the Welcome Lounge and a gift voucher for Dinner in the Sky will be given in the amount of the canceled flight.
  • Dinner in the Sky® is a product developed by Events in the Sky according to two words: Exclusivity and safety.
    We want to offer our customers the most exclusive experience they have ever dreamed of – and in a completely safe way. All our concepts have been developed in accordance with the German DIN 4112 standard. Our products are made in Belgium. This focus on safety is probably also one of the reasons why Dinner in the Sky® is now operating in more than 40 countries and has received official approval from the strictest countries such as the US, Canada, Australia, South Africa etc.
