At JOHN’s Chef’s Hall, we want to offer our guests more than just good food. We want to create an experience and give the opportunity to recognize the true value of the products we use by highlighting the best Latvian products. Based on the mindset, experience and professionalism of Chef Kristaps Silis and his team, we want to highlight each of these carefully researched products in the tasting menu and transform them into a unique and distinctive flavor.
Pretty much everything I know today I learned through experience – through experimenting, trying, failing and refining. This hands-on approach has given me a deep understanding of what happens in the kitchen, from the preparation of ingredients to the creative process behind each dish. To broaden my skills and vision, I interned at several Michelin-starred restaurants abroad, gaining new perspectives and inspiration.
Step by step, I worked towards my ultimate goal. Last year, I opened JOHN Chef’s Hall, a restaurant based on my vision, taste and experience. Here I have the freedom to create and share what I truly believe in – and offer my guests a dining experience that reflects who I am.
The JOHN Chef’s Hall story is not about the food, it’s about the culinary experience. Our menu includes author’s recipes, unique creations that tell a story on every plate. Chef Kristaps Sīlis’ culinary approach combines traditional techniques with modern innovation, creating dishes that are both familiar and surprising. Each recipe is carefully developed to highlight the natural flavors of the ingredients, often using elements gathered from nature or harvested from the gardens of our local partners and farmers.
